Put out on the table as many of the following as desired:
- Taco Shells: Garden of Eatin' or Old El Paso
- Mission Tortillas (vegan, with healthy ingredients, available in supermarkets)
- Lightlife Smart Ground® Mexican Style (ready-made vegan beefy taco filling, available in the produce departments of some supermarkets such as Stop & Shop and Shoprite, or health food stores and food co-ops)
- Amy's Organic Refried Beans with Green Chiles (our favorite, available in some supermarkets such as Stop & Shop and Shoprite, or health food stores and food co-ops)
- Daiya Cheddar Style or Pepperjack Shreds (vegan cheese, available in health food stores and food co-ops)
- Ortega Taco Sauce (vegan, with healthy ingredients, available in supermarkets)
- Follow Your Heart Vegan Gourmet Sour Cream (good substitute for the real thing, available in health food stores and food co-ops) or home-made sour cream
- Picadillo (spiced ground meat: see Pastelillos/Empanadas)
- Bean & Corn Taco Filling
- Guacamole (there are good vegan products out there but my recipe rules!)
- Cooked rice
- Romaine lettuce, shredded
- Tomatoes, de-seeded and diced
