Garlic Broccoli and/or Cauliflower Sauté

Garlic Broccoli Cauliflower Sauté pictured with Baked Tofu
Serves 8

  • Florets, divided into bite-size pieces, of 2 large heads cauliflower, OR 4 medium crowns broccoli, OR 1 head cauliflower and 2 crowns broccoli
  • Olive oil
  • 3 or 4 cloves garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste

Microwave or steam cauliflower just until tender; drain. Microwave or steam broccoli just until tender; drain. In a large skillet on medium heat olive oil to shimmering. Sauté garlic 1 minute until aromatic but not browned. Add vegetables and sauté until fully softened and browned, about 30 minutes. Add salt & pepper to taste; serve.
