Serves 4 as a snack or appetizer
- About 3 quarts water
- 1 1/2 teaspoons (or to taste) salt for boiling, plus more for sprinkling
- 1 pound fresh edamame pods, well washed
- Soy sauce for dipping, optional
Fill a 4-quart saucepan about 3/4 full with water. Add
salt and bring to a rolling boil. Add edamame and boil 6 to
10 minutes. Test for tenderness: edamame should be firm, yet
give to the teeth; they're overcooked if mushy. Drain in a colander and rinse with cold water. Sprinkle with salt to taste if desired. Serve warm or refrigerate 1 to 2 hours to serve cold.
Serve with soy sauce for dipping.
