Oven Sweet Potato Fries

  • 1 medium sweet potato per person, peeled and sliced into wedges (see below)
  • Olive oil
  • Salt
  • Pepper
  • Granulated garlic
  • Cayenne, optional
  • Paprika, optional

Preheat oven to 400 or 450 degrees F. Line a baking pan with foil or parchment paper.

Slice each sweet potato into wedge shapes 4 to 6 inches long and 1/2 inch thick. For an average potato, halve first lengthwise, then cut each half into 3 wedges—6 wedges total. For a very long potato, halve widthwise first, then lengthwise. For a very narrow or fat potato, cut fewer or more wedges to keep them all about 1/2 inch thick.

Toss wedges in a bowl with olive oil to coat, then seasonings to taste. Arrange in a single layer on prepared baking pan. Bake at 400 about 45 minutes, or at 450 about 30 minutes. Sweet potatoes are done when they're soft when pricked with a fork, and browned around the edges.

Serve hot or at room temperature.
